Depending on the breed of pig, its daily diet and the climate where the ham is cured, the quality of the ham will depend on them. Specifically, this comes from the breed of Iberian pig native to the Iberian Peninsula.
These pigs, for most of their lives, feed on high-quality cereal feed. And the last months of their life, before sacrifice, they will be fed in the pastures with acorns (fruit of the holm oak), combining all this with pampered curing in natural dryers for at least 42 months up to 58 months.
