Iberian Bellota Lomito

The lomito or stuffed acorn-fed prey is the most requested piece of meat from the Iberian pig, due to its juiciness and exquisiteness. Each animal only has two pieces, and they are located under the pig's shoulder blades.

Also very well known because it was always prepared on the grill in restaurants. Although since ancient times, for the houses where the traditional slaughters were carried out, they were embuchabas in natural casings, cured with the cold and winds of the mountains, taking place in a slow cure, a period that can last between 130 days and 150 days, depending on the piece size. Once cured, it was eaten on important days of the year (family celebrations and special events).

Some time ago it began to be marketed under the name Lomito de Bellota Ibérico. This product brings out the essence of the Iberian pork, due to the quality of the meat, its juiciness, added to the dressing, which gives it a soft aroma, together with all the quality that a good acorn product provides.

Product made with the muscular package formed by the spinal and semispinal muscles of the thorax, as well as the longussimus, lumbar and thoracic muscles of the pig. It is a single piece practically free of external fat, aponeurosis and tendons, which is generally subjected to the salting or curing process, marinated, to be stuffed into natural casings or artificial casings, to finish with a curing-maturation process.

It can be made from the entire piece or from the different muscle packages, known as embuchado or marinated lomito.

It is reddish pink in color and with normal veining or fat infiltration, the palate being very grateful for its intense and long-lasting flavor, caused by the ingestion of acorns in Iberian pigs.
